The non-vib update

Have updated so that the sound set defaults to non-vibrato sounds, with vibrato specified specifically, as opposed to the other way round. This was thanks to user feedback from people way more knowledgeable in big band than myself.

I also removed the bits of the sound set that use CC11, because this is a good way for users of Graphical MIDI Tools to add their own spin on the dynamics. That change is reflected in the manual on the website, but not the manual in the ZIP.
